These were individual cakes made with pound cake, a thin raspberry jam layer, a thin buttercream layer and a final layer of tinted "faux fondant" poured over. The crosses were made out of fondant. I am still having a hard time figuring out how to get the mini cakes fully covered with the faux fondant. As you can see from the picture you can see some pound cake on some of them which is why serving them on cupcake holders helps to cover that up!!! Any words of wisdom are appreciated.
