This was a 3 tiered red velvet cake. I learned two valuable lessons: 1 covering cakes in cream cheese frosting is great, but when you are stacking not so easy. I was fighting a broken air conditioner and humidity. Needless to say I was crying about an hour before delivery. My husband kept telling me it came out great. The second lesson: Just because I might see a single flaw doesnât mean that the cake isnât still fabulous. I was glad when they were delighted.
