This was my final project for the Wilton Course III Fondant and Tiered Cakes class. I've worked on this every single night for four nights straight, and it was both the biggest disaster and hugest success I've yet to have. Heidi (my instructor) was awesome helpful in figuring out how to get the bouquet in place when I'd given up on it. Being my first tiered cake, I didn't know the dowels were supposed to go THROUGH the cake board, but now I know. First carved cake, too!

hahaha!!! He's so cute!!! OMG - I was going to make a Christmas penguin for our Christmas eve party, but went with something else... now I'm sad I changed my mind! Congrats!! He came out amazing!

She did seem very pleased with it. She's wonderfully supportive, and recommended I take some Nicholas Lodge classes when I finish with Course IV.

So cute! Is the hat cake also? And, exactly how did she get the dowels "through" the cake board? I'v only taken mine down till it hits it. I would think it would take a sledge hammer to pound it "through" the board.

The hat is just fondant. I'd have dreaded carting the thing home from class if it was cake. And we didn't get the dowels through the board, but I failed to ask how to go about it next time. Hm.

Oh, and AndiSC, I didn't see your first comment! I carved him from a half 3D ball pan with two 6"x2" rounds, with the other half on top, and carved for a tapering effect. the first ball half and 6"x2" is one tier sitting on a board, with both tiers covered in one piece of fondant (I mixed mine to be half fondant, and half MMF). And the hat, feet, flippers, spats, beak, and eyes were all cut from self-made patterns (which I unfortunately threw away after using).

He turned out fabulous! I am a huge fan of penguins so I wanted to take him home. You are a very talented cake decorator. One day I'll be able to say, I knew her when....! :wink:

By the way, when I dowel down into the cake board, I use a very thick bottom board and a dowel sharpened with a brand new (cake dedicated) pencil sharpener. I also have a cake only tack hammer that I use to tap the dowel through all the boards. Hope that helps!
