Here I created 9 10" Cherry Cheesecakes for my friend Erin's Wedding. NOT A GOOD IDEA IF IT'S GOING TO SIT OUT A LONG TIME! The plan was to serve it for desert so I wasn't worried about the time, then I found out they were doing speeches before dessert. BIG MISTAKE. It didn't melt of anything but was really mushy when they went to cut the cake. It was really delicious!
