Ahh..so after I dip them put in fridge..they will keep on defrosting but slowly...I'm going to try that I have HUNDREDS of these suckers in my freezer..they were supposed to be for a party.
They look so damn cute! I can't quite figure out the cracking thing either - I think it's if the truffles are too cold when you dip them they crack, mine crack before even getting to the freezer - but not all the time - go figure?
I had someone do a couple of hundred for me for a party I was catering and they didnt' have that problem...and they wont tell me what they did...Calling "JOB SECURITY" lol

Looks yummy--just put cake truffles in refrigerator, that will keep them from cracking.
