Chocolate Fudge Cake. I use 375g dark chocolate melts and 300ml cream. Bring cream to boil and take off the heat and add chocolate, stir gently to melt the chocolate. I always use a little more chocolate than cream so it sets firmer. For the collar I made a Hybiscus stencil with cardboard. Using the stencil I put the hybiscus onto a strip of plastic (I think its called Klear Cake Band) and then covered with dark chocolate. Wrap around the cake, pour cooled ganache on top when totally cool/set peel off plast
