Rose Tower Cake
Here's my version of Peggy Porschen's gorgeous Rose Tower cake. I made the roses out of fondant instead of marzipan, but otherwise it's pretty much the same. I made it for my friend's engagement party. Her mom threatened to get a christmas-themed cake from costco. She came to me, weeping (dramatic brides), and I saw the opportunity to make this cake (about which I'd been obsessing for months). Finally, an excuse!

This is gorgeous, but I would hate to be the one to cut it. First because it's too pretty and second because I wouldn't know where to begin!!

ABSOLUTELY GORGEOUS!!!
I used 3" tall tiers, in 10, 8, 6, 4, and 2 inch sizes. I made about 100 roses. Plus the ones to replace the ones my 3 year old ate. ;-)

This cake is absolutely beautiful!! How did you atache the roses to the cake?
The tower of cake is iced in buttercream, then wrapped in fondant. I used royal icing to attach the roses (as per peggy's instructions). I have no idea how to cut the cake either, LOL! I just make the cake pretty. Cutting is someone else's problem. ;-)

So pretty!! I am going to try this one for my mom - she loves roses and butterflies. Did you make the butterflies with rice paper?
I didn't have enough time to make the butterflies, so I bought feather butterflies at Michael's. Not edible, but fast and pretty!
Oh WOW!! Please, just a couple Q's, did you carve the cake to a cone shape? And what size aprox was each rose? And what mold did you use for the roses? LOVE LOVE LOVE your cake!
Yep--I just doweled and stacked the cakes, then carved into a cone shape. The roses were probably 2-3" in diameter, and I hand-formed them. No molds.

Oh, I absolutely LOVE this! The color, the way you make the butterflies appear to be dancing around the roses, just fabulous!
I can't wait to practice enough to be able to do something like this it is sooooo pretty, I know you would have to do the flowers ahead but how soon before serving it could you completely assemble everything I am just new and i am so curioius about everything It is so beautiful!

That would be an absolute SIN to even think about cutting this cake.... If it were my cake I would have the whole thing shellacked so I could preserve it forever. Too beautiful.......What a masterpiece.....I have done 40 roses in fondant and that just about killed me. How long did it take you to make all those roses and how long did it take you to assemble this cake? HOw did you do it? Assemble the tiers and then put the roses on at the actual place where you had the shower?

The bride adored it. She was completely floored, and I'm afraid the cake took a lot of attention away from her at the party. People kept going over to the cake table to be photographed with the cake instead of her. ;-)
This is such a wonderful cake. How do you get the patience to make all those roses? I would just go nuts doing that. I think I will try this cake and I will get my friends to make the roses. hehehe!

Gorgeous work! I saw this in the book with the marzipan flowers and thought of trying fondant as well... I was looking for an excuse to attempt this cake, but thought it too flowery for a wedding cake, but the engagement party is a fantastic idea. I just hope I can come close to doing as great a job as you did!
