Mini Wedding Cakes/favors
This was requested instead of a large wedding cake. I made 60 of them. They are yellow cake with strawberry preserves and a whipped icing recipe I learned where I work... it is very soft but smooths real nice. I used a putty knife to smooth, I love that tool! The monograms are a yellowish royal painted gold. The cake was cut using a 3.5" cutter and then iced, and the box is 5" around.

Thanks all! I am not sure how long it took...a long time. haha. The gold is just "super gold" mixed with lemon ext. and I also tinted the royal icing a yellowish gold color too, that helps get a brighter gold. I'll try to post the icing recipe later. Its touchy to make and takes alot of mixing time but its really nice once you get used to it.
These are fantastic!! I love the idea of giving these out at a wedding. They are wonderfully done.
