OK--I've been playing with the techniques I learned in Grapevine. Large gown cookie cutter with Penny McConnell's cookie recipe (fantastic)--does not need to be chilled before using and does not distort or puff-up--and royal icing. Then royal icing stencilled pattern.
The icing is also Penny McConnell's recipe--seems to dry faster than Wilton's. The stencils were from Designer Stencils. It was a Heart with a filagree design.
One thing that I forgot to put in the description was that these cookies were first dipped into the royal icing, the excess was dripped off to the side and I used a spatula to spread to the edges. Alot faster than hand-flow.
