This was our second attempt at a cowboy hat cake. It was sitting on a cake shaped like the state of Oklahoma. The sash is fondant. I think the key for making this cake is to be sure that your brim is good and dry. We dried this one for about a week.
It's not hard, just takes some time. I carved out the sides of the cake to make the indent and put a roll of fondant around the top to form the shape. There's a little raised circle of fondant in the middle of the top to make the small hump.
I dried it over a kids play plastic hat lined with really tight plastic wrap. I filled the cavity with a dish towel to keep it straight. I used straight fondant, nothing added to it. After a few days, I took it off the hat so it could dry on the other side. Probably not technically correct, but it worked!

What is the brim made from. I am drying a MMF one now and it's too soft.
