My mom is diabetic and her wish for Mothers day was that I made her a cake. I used low calorie pear mousse with dark chocolate cake. Since I didn't want to use fondant or icing, I baked a thin layer of cake with a flower pattern embedded in it. I topped some gumpaste flowers to make a flowerpot.
