Pina Colada cupcake drenched in rum syrup iced in cream cheese and topped w/toasted coconut flakes. Recipe taken from Crazy About Cupcakes book but used my favorite cream cheese icing instead of theirs. IT WAS DELICIOUS. I've made 2 batches and everyone that tries them says that they are honestly THE BEST cupcakes they've ever had.
