Mexican Cake Decorating- Madame Pompedeur 1972 on Cake Central

A completed class project from a class I took in 1972 from Senora Marithe De Alvarado of Mexico City. The figures face was modeled of pastillage with one of her wonderful molds. The gown is a solid formed pastillage piece and then dressed in Pastillage drapes. Her hair and flowers are piped royal icing.

I had been thinking of taking a class from her a long time ago and never got around to it, I have a few examples of her work in p hotos, some place in my files, great artist!

Thank you. Actually all of the students did a part of the work on the cakes and they were raffled off at the end of the 5 days. I was lucky enough to win this one.

Thank you both. I wish I still had the molds I bought from her, they were made of plaster and disintegrated over the years. The detail of the faces were so perfect.

Is pastillage still in use today or has it been replaced by fondant. This is beautiful.

Yes, pastillage is still used today. Not as a cake covering like fondant, but to construct walls or buildings, something where you need the fast drying and strength of pastillage.

Thank you. This was a class project, all the students worked on elements of the cake. The raffled each of the cakes off at the end of class and I was so happy to have won this one.
