This is an unusual type of cake to make. The outer decorative layer is a chocolate stencil on top of a joconde sponge cake. The bottom and middle cake layers are an almonde - pistachio dacquois ( something like a cookie cake). I took blackberry puree and made a jelly as one of the layers. The rest is acai flavored bavarois (barvarian cream mousse). Topped it with fresh blackberries and white chocolate curls.
