Here's the Horse cake I made for my daughter's birthday. Double layered reverse marble covered with fondant. Ears and eye were gumpast.

I rolled a piece of gumpast about the size of a gumball and let it dry. Before I laid the fondant on top of the cake I cut an "eye socket" in the cake so the eyeball would only be sticking out a little bit. After I laid the fondant on the cake I slit the fondant over the eye and seperated it with my fingers and pintched it to make the eye lids. I then hand painted the iris and pupil. sorry - too long. Instead of using vanilla as a base and swirling in chocolate - you reverse them and use chocolate as your base cake and swirl in vanilla. Nice switch on an ordinary cake.
