Wild And Crazy Adult Birthday

I made this for my sons 26th birthday; I had been waiting for the right occasion for my first topsy turvy cake. I froze the layers from four carrot cake box mixes. The next morning I assembled and carved the cakes, then covered them in a cream cheese crumb coat and let it chill and dry. That evening I finished it with more cream cheese icing, a light random green and blue spray, candles, yellow and blue candy dots, and striped sugar coated candy I picked up on a whim at the check-out counter Air Nerds. All went well and it turned out better than I had hoped. I even got to bed at a decent time. The next morning I learned that carrot cake and cream cheese icing are not the best choices for a topsy turvy cake! Since it was whimsical anyway, I was able to salvage what was left into a much smaller cake! It was still delicious and made a great story.
