I made this for a dinner at the Fire Dept. where my husband is a firefighter/EMT. The shield and eagle that hold it, the brim of the helmet, and the ribs on the helmet are made of fondant. The rest is peanut butter buttercream made with a recipe I got from Serious_Cakes that I tinted black (delicious). I didn't have time to let it crust well so I couldn't get it really smooth like I would have liked to but overall I think it came out well...thanks to the article on here! I was pretty proud of the eagle shield holder, it took me a while to sculp it. Thanks to everyone who willing gives their expert tips for us newcomers to the cake decorating scene!
