I made these for my daughter's 7th birthday party. The flowers are meringue buttercream. I had to rush to finish these--it's amazing I got them done in time!
Thanks you guys! To answer questions: this particular meringue buttercream is called Meringue Buttercream for Flowers. The recipe can be found on marthastewart.com. Egg whites and granulated sugar are heated over simmering water, beaten until stiff, then LOTS of butter is added. I piped the roses on a flower nail. I first did the centers then froze them for about 10 minutes (this icing is soft). Then I piped the petals and froze the roses until they were firm enough to transfer to the cupcakes.
I meant to add that I piped the non-rose flowers directly onto the cupcakes. I piped the purple flowers, then added the frozen roses, then piped the yellow petals and the green leaves.
I stuck the finished cupcakes in the freezer for 10 minutes before we left for the party. I was worried I'd bump the flowers on the way there and mess them up. When the icing is at room temp it is soft. However, they were out for 2 hours before being eaten and they looked and tasted great. I just wouldn't leave them in a very hot area.
