Champagne Bubbles In Lilac

Champagne Bubbles In Lilac on Cake Central

This cake was for a Champagne-themed wedding, but we wanted to incorporate her lilac colour as well...so here is the compromise!

The tiers were 5.5" tall apiece and the flavour was Lime Zest Spongecake with Fresh Raspberry Buttercream, iced in Coconut Buttercream. YUMMY!!

Martga Stewart's Italian Meringue Buttercream, using all unsalted butter (no shortening) and egg whites. It;'s nice and creamy and easy to work with. I use a plastering tool to get my cakes really really smooth! (Plus I beat the buttercream with a paddle after I make it, to get all the air bubbles out.)

not until I smooth my tops better (hahaha!!) I'm going to try the paper towel trick I've read all about on this site because I'm NOT good at that part yet!

Your cake is so beautiful and smooth. My son just saw it and said wow smooth not like yours mom! Nice kid. lol. You did an awesome job.

your cakes are so smooth andyour edges so sharp it looks like plastic that's a compliment I'm having such a hard time getting my cakes smooth
