You can try Modern Buttercream by Joshua on Craftsy, it is a free video and a great recipe that holds well in hot weather.
Hi Janbabe,   Sweetapolita has quite a nice post with pictures and all on how to make a rainbow cake, was of great help for the first one I made a week ago.   I used the americolor gel and it worked like a charm, the colors are super bright!   Hope the link helps!   Ken G.
Hi Christi,   In Costa Rica we don't have cake flour either, I use this with great results:   3/4 cup (100 grams) (180 ml) all purpose flour plus 2 tablespoons (20 grams) cornstarch (corn flour) (packed)   Also I recommend you to have this substitution chart handy, has saved me several times:   Regards,   Ken

Hi Michael,I live in Costa Rica and believe me humidity is a big issue here. After trying several things I ended up buying a small dehumidifier.I put the dehumidifier in a small room and the cakes there, works like a charm. My cakes no longer sweat or shine (you can look at my pictures).As someone said before, stop putting the cakes on the freezer or at least do not cover them with fondant until they are at room temperature again.Hope that helps!

This was the first time I heard of it, and I had to go and search what it was about hehe.No I don't believe in that either Let me know what you come up with. I'm guessing a cake with this sort of theme would be dark, Halloween-like... but I'm only guessing.
