i often sub vanilla yogurt for sour cream. the same amount that the recipe calls for. you could use applesauce as well. i use a white chocolate chip frosting for my red velvet cake/cupcakes. i can't sell cream cheese frosting (because of the law i bake under).

you could order plastic cupcake holders. you don't have to buy an insert and they are more sturdy. plus, it looks nicer. i order from cuptainers.combut i get my boxes from brp.

I bake from scratch - and I love it! My cakes are very moist and delicious! But there is nothing wrong with baking from a mix or doctoring mixes. It's really just whatever you want to do!'s one. i'm not sure if it's what you are looking for - but i thought i'd try.
I have people ask for my recipes all the time - but I never give them out. It might be kind of mean, but it took me a lot of time and money to find the recipes that I love.
