When I am making my modeling chocolate I have noticed lately I have a lot of clumps.  Almost like the some of the chocolate is turning into a small pearl like balls.  How can I fix this?  It has happened with the last several batches that I have made.  I normally don't have this problem.
I am wondering if you had any help? I need to send a cake three hours away by car and I am wondering how to keep it cool as well. Any suggestions would be so helpful!!
I am shocked that she was unhappy!! Your cake is absolutely beautiful! Just realize if this is the first negative comment in 2+ years, IT'S NOT YOU! Sad to say that some people are never happy! You did great and you do not need to rethink what you are doing!!!
