Low Carb? Any Ideas?

Ok, I bring in cakes for my co-workers. However, one coworker in particular keeps asking me when I am going to bring in a low carb one. Any ideas??? I've looked into some low carb sugars and some are real expensive. I would be interested in things that wouldn't break the budget. I haven't found anything for icing that you can decorate with that is low carb.

Ideas would REALLY be appreciated.

Here is an icing that I found on line. This may be one of those that you can ice with, but not stiff enough for decorating or maybe you can decorate with it if it's cold?

I had that problem where I used to work. Everyone was on a diet but they all wanted to eat everything. I used to go to the Adkins website. They have a lot of recipes you can print off. I don't have any on hand but every recipe I tried went over well.

You may want to check out the Splenda website at www.splenda.com. I just did a carrot cake with cream cheese icing which had a net 19 gram carb count per serving. I had a little trouble with the icing tho.
