I am so excited about this cake, I just had to tell you all about it. I made a 3D bear head for a superbowl/birthday party today, using 12", 10" and 4" pans, plus 2 cupcakes for the ears. When I was carving it, I saved all of the scraps and made a 'spackle' with the scraps and buttercream mixed together to smooth some of the lumps and build up some of the facial features. This will be my method of choice for sculpted cakes from now on! It worked great. I iced the cake in white BC, smoothed it, then added some fur texture in a few spots. When I had all of the details how I wanted them, I airbrushed the whole thing to match the Bears logo. I've included a side-view so you can see some of the shape better.

WOW that is such a cool cake! I hate carving cakes most of all (okay maybe next to getting buttercream smooth! ) what is spakle?

I used the cake scraps mixed with buttercream (mixed w/my hand mixer) as a filler, like you would use plaster on a wall to fill cracks, etc. I was able to use it to build up the eyebrows, make the bridge of the bears nose, and fill in spots on the sides where it wasn't as smooth as I wanted it to be. This is a technique that I had seen in a book by Toba Garret (I think), and it worked great. Made it a lot easier to frost the cake too, since it worked kind of like a crumb-coat after it had set-up a little.
