What filling works best with chocolate cake? I was thinking of ganache, chocolate icing or just chocolate pudding. Please help. Thanks.

If you have access to Pastry Pride this is a really delicious filling, my most requested. I make a simple syrup of sugar, instant coffee and Kahlua to brush on the leveled cake layers, then I use this filling and ice in Sarah Bernhardt chocolate glaze. YUM!

Well, I think it depends on how chocolaty you want the overall cake to be. A mocha filling is really good and I really like the raspberry mousse filling recipe from this site, this goes very well with chocolate. If you want lots of chocolate, a whipped ganache would work, nutella, or chocolate BC to name a few.

I like cherry pie filling with a little fudge drizzled over the top.

YUM!!

Just be sure to cover both the exposed sides of the cake with BC or the juice will soak into the cake and make it soggy.

Thank you everyone for all your responses that are very much appreciated!!! I'm just gonna do some samples based on your suggestions and have my chocolate fans be the judges.
