Hello!

I just started getting into cake decorating, and enjoy it very much but since I have no experience and because my son is very allergic to milk product I need some ideals for different cake filling. Jelly and cream cheese imitation is getting very boring.

Please if U have any good ideal, HELP me!

Thanks
Val

What about peanut butter,
fresh fruits (strawberries, raspberries, bananas) things mixed in with cool whip (or another non-dairy whipped topping) make a great "mousse", marshmallow fluff, and that's all I can think of right now...hope that's a good start.

Pastry pride is a "non-dairy" that tastes like whip cream. You can also get tubes of raspberry, blueberry, apple, strawberry, cherry and pineapple to name a few flavorings for the inside that don't have dairy. Im my area, I get mine at "Cash and Carry". Kinda like a mini costco. There are cake decorating stores that carry them, and I am sure if you did a google search on cake fillings, you might be able to find something.

Good luck!

Hi,

I live in Florida. Some of the things are new for me (pastry pride) never heard of it. I'll look around.
Cool whip (even though it says -non dairy- is made of milk). icon_sad.gif
Peanut butter is very good, I jus never thought about it.
Do I need to mix it with something?
Thank you very much for help!

How about Wilton Buttercream icing with water instead of milk? Or, your own homemade b/c, lemon curd, choc chips w/ nuts and toasted coconut, I love fresh berries inside too!

I think it is a lot like cool whip so might not be the best idea. I like the idea posted above about the butter cream. You could also mix the raspberry, strawberry etc. fillings with the buttercream too.

Thanks for helping me. I really appreciated!
I'll try those ideals. What is lemon curd and chop chip? icon_redface.gif
Do you mix the fresh berries with something?

I do make my own butter cream, but I never thought of mixing it with anything.
Looks like I am not creative whatsoever!

lemon curd is sort of like lemon jam, but fancier, I guess... and I think jterrill just shortened chocolate chips (choc chips) hope that helps a little...

Is not just that I'm not creative, but someone who doesn't have a clue either. I'm talking about the choc chips.
I like lemon. Lemon jam is lemon juice and sugar? icon_biggrin.gif
Thanks again.

If your son has milk allergies DO NOT use chocolate chips, they're made with milk and/or milkfat!

My son is allergic to the protein in the milk. He could die from it!
We are dealing with this for more than 5 years now.
I make my own choc chips.

I make my own choc chips. (I found dairy free chocholate chips in the whole food store)

I have trouble to find puddinglike texture filling. And I don't know how to make it!
I'll check out all those websitets. Thanks again.

Hi Valcsika,

Found this recipe for faux Junket (Danish dessert pudding) that doesn't contain milk:

http://www.recipezaar.com/95829

Could probably also be used for cake filling - might need to cut back on the water a tad.

Thank you very much!

I'd like to know, U guys learned decorating cakes all by your self or went somewhere to get professional training.
I know I'm very new to this and I shouldn't worry myself too much, but boy, I see these awesome cakes and I don't feel that I ever going to be this good! icon_cry.gif
