I have to to take dessert to my Brother in laws next saturday and I was going to make a Black Forest cake but I don't have the energy to do it..I decided to do a carrot cake but I would like a really easy,non crusting BC cream cheese icing recipe that stays soft!!Any recipes?

I made a pineapple cake for a friend and used this recipe:
1 stick of butter
8 oz of cream cheese
1 box powdered sugar
1 teaspoon mexican vanilla

You could use more sugar if you want it sweeter...but this tasted great to us!
