Fondant and Royal Icing roses can be made months in advance. Store in an airtight container in a cool dark place.

You can make them as far in advance as you like. They don't have to be in airtight container but must be somewhere dry as moisture or humidity can ruin them. They shoud be somewhere dust free and darkness will help prevent colours fading. Along with most professionals over here I keep mine in a cardboard box. I do have sprays I made for my wedding 5 years ago which I keep in a glass display cabinet and they are still as good as the day I made them.
