I've made a carrot cake from the cake mix doctor book. I need a filling and have the cream cheese filling in the sleeve, but I'm going to be using the cream cheese icing, so wanted a little variety. So I was thinking about a lemon-orange filling. The recipe suggests using an orange cream cheese icing....but I need it to be white.

TIA,
christine

If you use orange oil to flavor, the color shouldn't change. What about pineapple? Pineapple and cream cheese are great together, and there's pineapple in some carrot cakes, too.

I know you want something different for the filling. . . but I just love cream cheese icing, so I always use that as my filling as well and always get great reviews icon_biggrin.gif

The pineapple one sounds good though icon_wink.gif
