Actually, what I'm trying to are make Yankee Doodles. The finally returned recently, but they are not the same. They are terrible. So I decided I would just make my own.  I searched for copycat recipes. After digging I found one for  the filling that did not include marshmallow creme like all the others. It involved egg whites, corn syrup and sugar. What the recipe produced was sticky, sickeningly sweet marshmallow fluff that is nothing like the filling inside a Yankee Doodle.

Does anybody know how I would be able to accomplish a filling that is similar to the real thing and is room temp stable. No butter creme or pastry creme, etc?
