Hello Everyone,

I'm making a strawberry cake and my customer wants it to be covered with whipped cream all around.

Im delivering the cake and the weather is very hot where I live, it's only a 20 minute drive and I will be turning the AC on for sure. But my sister did that once and when she arrived the whole whipped cream was melted and I'm afraid that will happen with me.

i read that I can stabilize it with gelatin or vanilla pudding, I just want to know what's best and if any of you have experienced it before.

Thank yoy

Gelatin will stabilize the cream so that it will hold itself in shape once the air escapes from it, it will not prevent it from  melting in the heat, perhaps it will be more durable but both the cream and the gelatin will be effected by very warmeeratures.
