After much research I was able to find a delicious and moist vanilla cupcake recipe - FINALLY!

THE DILEMMA: I baked 24 cupcakes at 325 degrees for about 15-17 mins. About 1/4 turned out great - the REST had bottoms that got too dark? Any tricks on how to fix this? Thank you all!

Are you using a convection oven?

Do you rotate your pan half way through baking? You can also put a cookie sheet on the empty rack below it.

I will give that a whirl! I had no idea a simple cupcake could get so complicated! Oh goodness!

Thank you for your advice!

You're welcome! Cupcakes are the worst, but I love them lol using the cookie sheet helps me a lot, it creates a barrier between that bottom heat element and the bottom of the cupcake pan.

All (at least most) ovens have 'hot spots'.  You have to learn how your oven runs/works.  In my oven, it's the front 3"-4" that don't bake up well while the rest of the oven almost burns things so turning the pan part way though is necessary.

So I went through a burning streak. I couldn't understand why everything I cooked came out burnt and cooked at lightning speed. Do yourself a favor and buy an oven thermometer. it turns out that my oven was running a hundred degrees hotter than what it was set at! Yeah.
