They don't let us post recipes in the recipe section anymore so I'm posting this here.   Hope you enjoy this new idea/flavor cake :)

Moonlight Mellow Cake recipe  (AKA: Chocolate Spice Cake)

Prepare your pans as usual. Makes a 10" round, or 11x8 sheet, or 8" sq pan or two 6" rounds.   Preheat oven to 325 degrees F.

1 box chocolate cake mix                   1 teaspoon ground cinnamon                   1 2/ teaspoon nutmeg                        1 cup cold mashed potatoes             1/2 cup butter (or margarine, softened           1/2 cup water              3 large egg                   1/2 cup chopped nuts

Place mashed potatoes, butter, water and eggs in mixer bowl, mix on low 1 minute.  Add the remaining ingredients.  Mix on low about 1 minute, then on high for 2 minutes.  .   Bake at 325 degrees F.  for about 30 minutes until it tests done w/a toothpick in the center.   Cool in pan 25 minutes before removing to cooling rack.

Why can't you post recipes in the recipe section anymore? What do the mashed potatoes do? You are like the queen of doctored box mix so you know I'm going to have to try this one! :)

Not sure exactly why we can't post in recipe secton but I think it has to do w/copyright.  As far as I can remember none of these are - many of them I created :) 

It's been many yrs since I've made this one......it's just a lightly spiced choco cake.  The potatoes lighten it.    I have sooooo many old doctored box mix recipes.  Have already posts at least 8 or 10.
