I'm a self taught, learning as I go, home baker! Today I'm making a chocolate cake and made a milk chocolate ganache to whip for the icing.. It won't whip up nice and fluffy like I want it to (probably too much cream) and I don't have more chocolate to add so I was thinking, I could make a meringue and fold it into the whipped ganache.. Is this a thing? Or even possible? And I don't mean IMBC, I'm talking just egg whites whipped with the simple syrup.
