I've been asked to bake groom's cakes for my brother's wedding. They will be naked devil's food two layer cakes with Oreo cream cheese whipped cream filling. Before serving I'll finish them with chocolate ganache. I plan to freeze the individual cake layers, but now I'm wondering if I could fill and freeze them, cutting way down on the last minute rush to get five cakes ready to serve just before the wedding. I am concerned about how the filling will hold up to the freezing and thawing.

I wouldn't fz whipped cream cr ch fillinng.  Neither one can be fzn (alone) so I don't think it will work.  If you have time take a 1/4 cup of the filling and fz it to see how it holds up.
