Does Ricotta Cheese Filling In Smbc Iced Cake Need Refrigeration?

I am doing a cake in Florida in November and am using a ricotta cheese filling with a SMBC frosting with some high ratio shortening in it and some butter. Can the cake be left in an air conditioned room overnight or even two days after it is filled and frosted?

I wouldn't leave ricotta out. It's a moisture cheese and they recommend it not stay out of the fridge longer than 2 hours.

I agree w/ypierce......4 hours out of refrigeration is tops - unless that has changed to only 2 hrs.  And that 4 hrs included any time out for making/decorating etc.
