Hello, so I am having so much trouble trying to find a whipped cream recipe that won't melt at room temperature I know that it's used a lot in store cupcakes but I can't figure it out. Heavy whipping cream, sugar, and gelatin??? I'm looking for a chocolate one that is whipped and crusts a little but any input would be appreciated. Does it even have whipping cream??? I'm so lost since the buttercream is different.

For white stabilized whipped cream all you have to do is add a little clear piping gel to the mixture.

For the chocolate, I believe you're thinking of whipped ganache, which does have whipping cream in it. Basically you take the soft ganache and whip it until you get a buttercream consistency.

Not sure about the crusting though; I haven't tried either way yet. Good luck!
