Hi All,

I've only ever used royal icing on christmas cake which has had a layer of marzipan in between which I'd let dry off for a few days.

I was told if you put the royal icing straight over the fresh marzipan, then the marzipan would bleed through.

So, my question is. If I made a sponge carrot or chocolate cake. Could I put royal icing straight over the top of it, or would it bleed through, thus needing a marzipan barrier?

I would think you would need some kind of barrier before the royal icing, depending on how "Drippy" you made the icing. But I am curious what other bakers have to say, following! :)
