Hi all

im an amateur baker making a birthday cake for my daughter. Im planning on making a white chocolate rainbow mudcake with Swiss lemon butter icing. 

i don't have much time mid week so planning on making the layers today (party is next Saturday). Should I wait for them to cool and then freeze them? Or how should I store? 

I understand mudcake tastes best when it's aged a little bit. So just wondering if the freezing period counts as "ageing?"  Or should I make now, freeze til say Wednesday and then defrost and get ready for assembling/decorating (Friday and Saturday) 

also just checking once it is frosted, do I need to store in the fridge? My house would get to mid 20 degrees in the day.
