Help My Chocolate SeizedHi I am trying to color some chocolate black. I tempered the chocolate and added Americolor black candy coloring (oil based) and the Chocolate seized  (I think). Can I save it? I guess the color wasn't warm enough. I don't think I scorched the chocolate. I did NOT use flo coat. I made sure everything was dry. Help!

I have never been able to resuscitate siezed chocolate.  However, try adding in a tiny bit of fat, say 1 tablespoon per 6oz... melted already (or use oil.)  You can't get ANY water even a hairsbreadth droplet near your chocolate when melting.  Your pan was probably too hot. I use a quick-read thermometer.

Yes, sometimes adding fat can help. We've had better luck with solid vegetable shortening, than with butter or oil. Sorry to hear this, it's always annoying.

I've never been able to save seized chocolate either.  To prevent waste, I let it harden and then chop it up for cookies.
