Commercial Oven For Cookies

I am in the process of potentially opening a shop in my area in which we will be serving large quantities of warm/fresh baked cookies.  A colleague who used to own a full fledged bakery recommended a Blodgett 6 rack electric oven.  


Commercial equipment is so very new to me so I would welcome any suggestions on ovens would be welcomed!  Is there a type of oven that is better than others for cookie baking as opposed to cakes/pies? Deck or convention ovens?

I owned a bakery & cafe, and agree with your friend; a deck oven works well for cookies. But my preference is gas.
