I've been asked to provide a 2 tiered cake - customer wants a 12 or 14" sponge cake with a smaller 10" fruit cake - I had fully intended to dowel etc as I stack but someone has suggested I shouldn't put the fruit cake on top because of the weight.......thoughts/comments please?
A proper support system takes that idea out of the ?. Yes, a fruit cake is heavier than what we in the states use but still well supported that weight should not matter. One suggestion would to be use Wilton's hidden pillars and a plate. These 'hidden pillars' are hollow posts about 1" wide so you will lose about 1 or 2 servings of cake but well worth the safety for the overall presentation of a beautiful cxreation.
