I've been asked to make a 2 tier cake to serve around 70 for a 70th wedding anniversary - that in itself is amazing!! When I asked what sort of size portions were required from the cake she said 2" servings not the more typical 1" portions. The cakes will be square and the larger will be a sponge and the smaller a fruit cake. I have a guide which shows I should be 36 2"slices from a 12" cake and 25 from a 10" giving a total of 61 servings at 2" portions - does that seem a sensible way to go or should I look to do a 14" and 12" which would give me over 70 slices. I know its up to the customer whether there is cake leftover or not but I would prefer to minimise potential leftovers, actually thinking about it, there may be folks who dont want cake so I'm sort of happy to go with less than she wants - what does anyone else think......This will be my first order since properly registering as a self employed baker in the UK!
I'd go with 14 and 12" as 70 servings are required . Obviously you would charge for the additional servings...
Wilton guide is saying 30+48 for 10 and 12" party servings by the way...
