CARROT CAKE W/MOLASSES
1 pkg spice OR carrot cake mix 1 cup A.P. flour 1 Cup sugar
3 eggs 1 cup water OR Orange juice 1 cup fresh grated carrots 1/2 cup finely chopped pecans 1/3 cup butterscotch ice cream topping
1 cup molasses 1 cup sour cream
DIRECTIONS: In a bowl, using a whisk mix dry ingredients well. Add to mixer bowl the eggs, juice/water and carrots; add dry ingredients. Mix on low until all is evenly wet then add the remaining ingredients. Mix on low for 2 minutes.
Pour into prepared pans. This is enough batter for one 10" round or one 8" sq. or 2 or 3 6" rounds - or other combinations/sizes.
Bake in 300 degree F oven for 20 minutes, then turn temp up to 325 and continue baking another 20 minutes until cake tests done OR untill you smell that wonder oder of a baked cake throughout the house:)

Orange Carrot Cake
1 orange, 2 C flour, 2 C white sugar, 2 tsp baking powder, 4 eggs, 2 C grated carrots, 2 tsp baking soda, 2 tsp cinnamon, 2 tsp nutmeg, 1 tsp salt, 1 1/4 C oil, 1/2 cup chopped nuts, orange carrot cake frosting (recipe below)
Trim thin slice from both ends of orange; cut in half lengthwise. With shallow V-shaped cut, remove white center core. Cut halves into wedges, removing any seeds. Cut into chunks and put in blender. Puree. Reserve 1 T for frosting.
Sift together dry ingredients. Add oil and orange puree; mix well. Add eggs and combine thoroughly. Stir in carrots and nuts. Grease pan well.
Bake at 350 degrees for 1 hour or until done. Let cool in pan 10-15 minutes.
Orange Carrot Cake Frosting
1 8 oz, package cream cheese, softened, 1/4 C room temp butter, 1 box powdered sugar, 1 T orange puree
Beat cream cheese and butter; mix other ingredients in and frost the cake.
This cake has been made in 13x9 oblong mostly, but I've also baked it in 2 8" or 9" cake pans. Unfortunately, I haven't written down the time for the smaller round pans, but I think it's 30-35 minutes.
