Hello, we are starting a cake business and wondering how we can calculate nutritional facts for labeling. Is there a consulting company I should approach or can I do it myself? Any assistance greatly appreciated.

I would start by checking with your health department...
Some areas may require it... others not...
Businesses that have income less than $500,000 are exempt from the nutrition labeling law.
There is a website called FSANZ for Australia and New Zealand that may be helpful. You put in you recipe and it works out the nutritional values. It is a bit time consuming at first, but you save your recipes and can alter if need be.
