Cake ingredients:
1 pkg yellow cake mix
1 Cup strong brewed tea- *see note at end*
2 eggs
1 teaspoon grated lemon zest
Filling ingredients:
2 teaspoons butter
1/2 teaspoon cinnamon
2 Tablespoons brown sugar
3 oz chow mien noodles
1/2 Cup apricot preserves
Mix cake ingredients for 2 minutes on med speed of KA mixer. Fills one 10"R OR one 8" sq OR one 12"x8" sheet OR one 8" and one 6" Rounds; Bake in 300 degrees F oven for 20 minutes; turn oven up to 325 degrees F and bake an additional 15-20 minutes until cake tests done w/a toothpick.
Put 2 layers together using the filling.
Filling directions: In a skillet heat butter, cinnamon, and sugar until melted. Add the noodles. Stir over low heat until syrup is absorbed. Cool. Crumble cooled mixture into preserves; spread between 2 layers of cake.
*Note* Can use 1 cup water and 2 teaspoons instant powdered tea.
The recipe is for regular tea but I've been thinking all day about the possibilities of the different flavored teas. Why not??
