How Far In Advance Can I Make A Fondant Covered Cake

Long story short - I need to make a fondant covered cake, over american buttercream for someone. Nothing is perishable. It is filled with buttercream, iced and covered in Fondant.

She needs to pick it up the night before the party and as I do this in the evenings I wanted to cover in fondant one night and then the next night do the decorations on it and then the third night she picks it up and its served about 24 hours later.

So Sunday - ice and cover in fondant

Monday - Decorate it

Tuesday - she picks it up

Weds - She eats it

I would do the fondant sunday evening just to shorten the time frame.

Is this wise? Or should I just bang out everything Monday night?

I think it should be fine.  Do you bake ahead of time and freeze?  I would not do anything on the cake unitl Sunday night.  From Sunday night to Wednesday night it is technically 3 days.
