Can anyone please recommend a basic vanilla mini cupcake recipe that would bake 48 mini cupcakes? I'm located in Australia so aussie measurements etc would be fantastic if possible :)
I have tried using Bakels mulit purpose sponge mix and it turns out that this mix isn't good for mini cupcakes :( I have been trying to hunt down a good recipe from scratch but there's been mixed reviews on the recipes that I've read. So thought I'd try in here :)

I'm so american -- and I mean I'm ok with that -- but you would not want my recipe -- hopefully someone will post an Aussie one for you soon --
I can say that very careful baking is crucial to a vanilla mini cake -- and just another thought -- you would not want to bake a whole cake and cut out round cakelettes from that? would be easier to control the bake but anyway

I didn't use the frosting recipe though because I use SMBC. Just divide into 48 minis and bake for less time. I would start with about 8 minutes at 180C and then test them and see if they need to go longer.
