I try to make some Paleo Cupcakes with no sugar or butter.
So i used applesauce to replace sugar, coconut oil to replace butter.
here is the recipe:
1 cup flour
120g unsweetend applesauce
1/3 cup milk
2 tablespoon coconut oil.
1*70g egg
My oven works right since the regular recipe cupcake won't peak or crack.
So it is must be the recipe's problem.
I tried to bake at lower temperature but it does the same thing. (tried 120C and it takes 50min to let the inside dry.)
Anyone know the "Baking Science" and can help me improve the recipe?

not sure if my ideas are Paleo but just baking ideas -- different things i would try:
- use half self raising half plain flour
- add an egg
- add another egg
- add cinnamon
- add vanilla
- add lemon juice/zest
i have a recipe that calls for four eggs and I thought no way -- but I made it as written and it was great -- the egg holds everything up and together
you might want to cut back on milk as you add egg/s
lemme know how it goes
another idea is to cook down the applesauce to increase the flavor
how did they taste

Are you using a "paleo" flour? (almond/coconut/arrowroot?) Since you say it is self raising then I assume not, so I will comment under the assumption the flour is wheat derived.
My guess is that it is cracking because it is too dry. Sugar plays a very important role in baking.... it not only makes things sweet, but it tenderizes and leavens as well, and the applesauce wouldn't have the sufficient amount of sugar content. For baking substitutions, applesauce is usually used to replace eggs in vegan baking or oil or butter in low fat baking. If you are looking for a paleo substitute for granulated sugar, then I suggest coconut sugar, raw honey or maple syrup.
