Hello, I've been in the process of opening up a retail residential kitchen. However, I've found that it is really difficult to find answers to my questions and what is required online and my local health department isn't very helpful and just gets annoyed when I call to ask questions. Therefore, I was wondering if any of you have experience with a retail residential kitchen in MA. Other than the application for the license/inspection, a copy of the 1999 food code, and a revised copy of the 105 CMR 590.000, what else is required? Also, what do they look for in the kitchen inspection? Obviously, I'm going to do a huge cleaning and organizing before the inspection but I don't know what to expect and what they will be searching for. Thank you for your input.
